I take lots of vegetables nowadays - no more big portions of carb for my lunch! Most of time, I would just have a big bowl of fish, chicken or beef salad for lunch.
One of my favourite dishes is the orange-flavoured chicken breast salad, as pictured below. With a completely new diet, I have so far lost 10 kgs, with a waist line of 29 inches to boast. On top of that, I feel healthier! Most important thing is, I no longer feel sleepy after lunch!
Orange-Flavoured Chicken Breast Salad
You need:
2 chicken breasts ...........................................................................................................................................................
a pinch of salt & black pepper ...........................................................................................................................................................
two oranges ...........................................................................................................................................................
one spoonful of flax seed ...........................................................................................................................................................
one egg white
Steps:
1. Marinate your chicken with orange juice, salt and black pepper,
put aside for several minutes ........................................................................................................................................................... 2. Cut your vegetables ........................................................................................................................................................... 3. Dip the chicken in the beaten egg white and roll it on the flax seed ........................................................................................................................................................... 4. Pan-grill the chicken in low heat for several minutes ........................................................................................................................................................... 5. Chop the chicken ........................................................................................................................................................... 6. Mix the chopped chicken with the vegetables. Put the mix in the bowl. Cover with a plastic wrap and chill for at least 15 minutes in the freezer before serving.
