Fried Rice With Hijiki Seaweed
I only take rice once a week; so on my "rice day" last week, I made this brown rice fried in Hijiki seaweed. I threw in some chicken meat and veggies - specifically, broccoli and baby carrots, and sesame oil to taste. I bought the dried Hijiki at a nearby Jusco supermarket. The seaweed can somehow make the rice a little sticky, so I had put in just a small portion of it. And for garnishing, I added a piece of seaweed snack, and a piece of Rocket just to make it look presentable! Not so? Oh well...

Purple Potato Salad
3/4 Purple Potatoes, steamed, peeled & cubed
........................................................................................................................................................... 1 yellow potato Japanese cucumber, slice thinly
Pistachios (crushed) a medium size yellow & red capcicum each, diced into small pieces
1 stalk celery, cut into small pieces
........................................................................................................................................................... 1 Teaspoon Cumin & 1 Tablespoon Olive Oil
........................................................................................................................................................... Fresh Lemon Juice & Crushed Pepper
........................................................................................................................................................... Steps: 1. Steam the potatoes till fork tender & cool & cut them into cubes. ........................................................................................................................................................... 2.Heat olive oil in a pan until just warm. Add the cumin seeds. As the seeds sizzle add the salt, paprika, cubed potatoes and at high heat give them a quick toss for a minute and switch off the heat. ........................................................................................................................................................... 3.Add the sliced cucumber, capcicum, celery, & pistachios to the potatoes. Drizzle the rest of the oil. Sprinkle some crushed red pepper and finish it off with some fresh lemon juice. ...........................................................................................................................................................
4.Serve warm or at room temperature. ...........................................................................................................................................................
